VINIFICATION AND AGING
Time of harvest: the last ten days of August
Vinification technique: non aggressive destemming , cryomaceration, pressing and subsequent fermentation in temperature controlled stainless steel vats for 20 to 25 days.
Ageing process: on fine lees for approx. 3 months
Refinement in bottles: minimum 2 months
Stabilising of the product: cold stabilization
