A wine which ages surprisingly well.
VINIFICATION AND AGING
Time of harvest: the last ten days of september
Vinification technique: non aggressive destemming , cryomaceration, pressing and subsequent fermentation in temperature controlled stainless steel vats for 20 to 25 days.
Ageing process: on fine lees.
Stabilising of the product: cold stabilization
